We are excited to be releasing our 2012 Merlot Reserve today! Our Pippin Hill Farm Reserve is a traditional Bordeaux style blend of Merlot, Cabernet Franc & Sauvignon. We selected the best barrels of each varietal and constructed the wine based on the complexity of each.
The vintage is 100% Merlot with the earthiness of dry leaves and the lure of dark berries on the nose. This very approachable wine features luscious flavors of coffee, caramel, and chocolate. It is an age worthy, structured Merlot with warm spices and cedar accents that linger in its finish.
Production Notes
In general, the Merlot Reserve receives a cold soak and then ferments on the skins in stainless tank. The fermentation is pretty warm, in the 80s F. The maceraction is extended to create more body depth and structure in the wine. It is then aged in a combination of new and used French Oak for at least 11 months and then bottled and aged in the bottle until it is ready for release.
